I have gained approximately 15 years of experience working in hotels and restaurants in Tokyo, including Michelin-starred restaurants, and have been pursuing a style of cuisine based on French cuisine. I am particularly skilled at making terrine, with a focus on colour and the beauty of the cross-section, and it has garnered over 5 million views on social media. I made it to the final selection for the RED U-35 Dream Kitchen Award.
