“Le Moulin at Ayssenes is a paradise. We were so privileged to spend even a fairly cold, wet February in this place. The serene little medieval village above, with bells ringing hourly from 7am to 10 pm; the tranquility of the sheltered valley; the spring flowers blossoming everywhere, the energy & also peace of the stream...Ayssenes & the surrounding country is pristine, & we are in love with Aveyron. One travel writer describes the region as a place where you need to 'take time', & an 'alchemy of eras made possible because the people respect the balance of things in their ambition for progress.' This was our experience. Noël's hospitality is exceptional. The market at Saint Affrique is a genuine rustic French experience, & Roquefort with its amazing cheese is an easy drive from Noël's place. Highly recommend.”

“Elisa and Jacques are very friendly, both present and discreet. To meet for a coffee in the morning, or throughout the day, is to share a friendly moment. The bedroom, included in the east wing they inhabit, is very pleasant. We particularly appreciated the small fire of the wood stove in this winter month. We get used to dry toilets after a while if this is not usual. A whole, which, in this grand and magnificent place, makes it possible to think concretely of possible ecological and social alternatives ... and to reconnect with some essential foundations. Vous serez totalement indépendants une fois installés . dans le village se trouvent une piscine municipale chauffée , une station essence ,une mise a l'eau pour naviguer sur le lac , plusieurs départs de sentiers de randonnées . de nombreux lacs et points de baignade se trouvent a proximité .
“Françoise and José are great hosts. We were very well received.Les breakfasts are perfect and the evening meals prepared by Françoise are delicious. The geographical location is suitable for swimming as well as for walks. Nature sports lovers will be delighted. Surrounded by hiking trails overlooking the Tarn Valley, the house of Françoise and José is ideally located for fans of Trail, and hiking pationnees. Fans of idleness will not be left behind, a nap on the banks of the Tarn, a swim in white water, a cocktail on the terrace decorated with the accent of Marseilles José gives a certain authenticity at the moment, an air of Pagnol. Finally their accommodation is very nice very well maintained it is clean and very well done. It is organized in such a way that the hirers have their dedicated sleeping area, sanitary block included which is appreciable. I highly recommend this host”
