What you'll do

This experience is as much about history as it is about food.

The objectives are that each guest will leave feeling: Excited, informed, and loving Mexico even more!

We will begin our journey with an introduction to what pre-hispanic life was like, around the times of the first interactions between the Mayan's and the Aztecs. For example, a very important trait of all food at the time was the perfect aroma and flavor... it was believed that the God's would not accept your offerings of foods to them if these two traits were not right.

Next, we will explore the tools and implements, and also explain what each are used for, and allow the guests to get involved by using first the "molcajete" and "metate" to make two types of salsas by hand.

Next, guests will learn to make two types of tortillas, white and blue, by hand.

Mole and camote are next, and we will be making enchiladas de mole.

For our salad, we will be creating either a "ensalada de nopal" or guacamole, depending on the ingredients available on that day.

We will then be teaching the guests how to two types of "agua del dia", or fruit water.

All recipes from traditional ingredients.

I am a Mexican woman who is proud of my heritage, and in love with the nature, the colors, folklore, flavors, and smells of Mexico. I am proud to be of indigenous heritage, and even more proud to be from a line of artisanal, authentic pre-hispanic chefs. I was taught from an early age, not only how to cook and prepare the food, but also that food and water are life, and that we must respect both greatly.

I own a organic produce delivery business, and enjoy teaching the background of each fruit and vegetable, and how they were both used as medicine and food in ancient Mexico.

The experience Claudia provided was such a personal and warm one. I felt like I was spending quality time with family. Claudia is filled with such wisdom and personal experience and she has so much passion to share it with you. She carefully explained each ingredient we were using and why we were using it. We left the experience with the confidence to make these meals on our own and she encourages you to share them with others and keep the history alive.

If you’re in Mexico City for any period of time, a cooking class with Claudia is a MUST. She is one of the most authentic beautiful people I’ve met, and her mom and her family are seriously special. I learned so much about traditional dishes, the history and importance of them, and felt super connected to the group because of the environment Claudia creates. Claudia and her mom are MAGICAL. I can't quite fully express the unique experience we had with them. My friend Nina and I had so much fun cooking and learning how to make traditional Mexican food, but it was more than that. It was such a spiritual awakening and you could feel the love and passion in the room. Claudia speaks from the heart and shares her love through cooking and stories. It was such a special experience full of love, light, and really tasty food :)

Claudia and Doña Rosa were everything! A home away from home and more for me, I haven’t felt that amount of love and openness in the way I felt it with them and our group and the amount of love that was shared is one to never forget. I can’t thank them enough for the experience they were so attentive and they shared so much of themselves with our entire group it was a magical experience I will remember for the rest of my life and this is not an exaggeration, the food was incredible but the connections made were that much more. I can’t express enough how much I love these incredible strong and loving women. From the market, to the apartment and the dancing and tortilla making and OH MY GOD the mole and guacamole and did I mention the pulque and plate sharing?! Hours of creation and laughing and connecting with our whole group I 100% recommend you meeting and experiencing a moment with them because they are so unique and special and I can’t say enough how grateful I am for the little time I spent with them and our whole group. We really enjoyed this experience. It was a great opportunity to not only learn some more about pre-Hispanic food but also to get some hands-on experience cooking it. The food in Mexico City is great but it is very heavy on meat so this was a good opportunity to have a vegetable centric meal and it would certainly be perfect for anyone who is a vegetarian or vegan or anyone who is just interested in eating less meat. I’m so glad to have the recipes on hand for future use and it was great meeting Claudia. I would recommend this experience for anyone visiting Mexico City.
