Coco was fantastic, patient, funny, and full of local wisdom. She shared not only recipes but traditions and how these dishes are tied to Mayan heritage. Rolling the masa, wrapping in banana leaves, and watching the cochinita slowly cook was both relaxing and rewarding.
Everything smelled incredible, and when we finally sat down to eat, the flavors were rich, smoky, and absolutely delicious. The cochinita pibil melted in our mouths, and the tamales were perfectly soft and aromatic.
