What you'll do

You’ll be welcomed into my organic farmhouse near Florence. I will provide a hands-on experience in my big family kitchen to master the Tuscan way of cooking. We'll prepare together traditional dishes, following my grandmother’s recipes. You’ll be introduced to a complete menu including appetizers, fresh pasta, main course and desserts. Nonna Dina’s homemade pasta, locally sourced produce and a good local wine will be the highlights of the day! We will be inspired by the rolling hills, olive groves, and vineyards surrounding our farm. A warm welcome with sweets and savoury biscuits is waiting for you under the vine pergola, or depending on the season, in the loggia. A short walk leads to our fields, where we grow heritage grains, and where we will pick cooking herbs. We'll cook with simplicity choosing fresh ingredients and working with nature to create beautiful flavours. We will make different types of fresh pasta from scratch: tagliatelle, ravioli or topini, with a simple rustic sauce. The maincourse could be a meat dish, or a vegetarian option, both based on seasonal and local available produce. Lastly you will learn to make Tuscan biscotti di Prato or a tiramisù. Before lunch, professional musicians will perform the most beautiful Italian songs and famous opera arias. At the end of the concert the meal will be served in the dining hall with a glass of good local wine!

Barbara

Florence is the city where I was born. I live in Podere Montisi, my family, organic, biodinamic, totally sustainable farm in Travalle, a unique place in the world, an old village next to Florence. I am a seed saver and work on different projects with the University of Florence and local farmer associations to save Tuscan Biodiversity. We grow heritage grains, which are used to make our pasta, we have olive trees, and grow a variety of aromatic herbs. When I was a child my Grandmother and Grandfather used to prepare homemade pasta dishes every Sunday morning. This was always a big family reunion everyone looked forward to. I would like to share all the emotions a tipical Tuscan country house can offer, preparing traditional italian meals with guests from all over the world.
